Breakfast Parfait

Makes two to three parfaits, depending on the size and height of the glass. The perfect low-fat breakfast when you need fast, fit and fabulously delicious.

Ingredients
- Toppings:
- 2/3 cup plain nonfat or low-fat yogurt
- 2/3 cup low-fat ricotta cheese
- 1/2 tsp vanilla extract
- 1/2 to 1 tbsp honey
- 3/4 cup low-fat granola or nugget-type cereal
- 1 1/2 cups sliced or chopped fresh fruit
- Vanilla wafers, low-fat ginger snaps, shredded coconut or chopped nuts
Preparation
Step 1
Use a wire whisk or a hand blender to mix yogurt, ricotta cheese, vanilla and honey in a small bowl until smooth.
Use two tall glasses to assemble parfaits. For each parfait, layer 1/4 of the yogurt/ricotta mixture in the bottom of each glass. Add 3 tbsp granola to each, followed by 1/4 of the fruit (about 3 tbsp). Repeat layers. Garnish with your choice of toppings. Enjoy every bite!
