Ingredients

  • 1 cup flour
  • 1/2 tsp salt
  • pinch pepper
  • 1 Tbsp scallions, chopped
  • 1 1/4 cups milk, at room temperature
  • 2 eggs, at room temp.
  • 1 Tbsp butter, melted
  • 3 ounces Gruyere, grated

Preparation

Step 1

Preheat oven to 450 degrees

Gererously grease a mini muffin pan

In a medium bowl, whisk together the flour, salt and pepper, and scallions.

In another bowl, whisk together the milk, eggs, and butter

Pour the wet ingredients over the dry ingredients and whisk until just combined.

Fill each muffin cup to within 1/4 inch of the rim.

Place about 1 scant tsp. of grated cheese into the center of each muffin cup.

Bake, without opening the oven door, for 10 minutes.

Decrease the oven temperature to 350 degrees

Bake, without opening the oven door, for another 8-10 minutes longer.
