Rugala with Creme Anglaise

Ingredients

  • 1 cup heavy cream
  • 2 teaspoons vanilla extract
  • 4 egg yolks
  • 1/3 cup sugar
  • 8 pieces Countryside Raspberry Rugala
  • 4 teaspoons prepared raspberry sauce or melted raspberry jam
  • 4 tablespoons diced walnuts

Preparation

Step 1

In a small heavy saucepan, combine cream and vanilla; warm over medium heat until bubbles form.

While cream is heating, place egg yolks and sugar in a bowl and whisk until smooth.

Remove 1/2 cup of heated cream from the saucepan and slowly whisk into the egg mixture.

Once combined, gradually whisk mixture back into remaining cream in the saucepan. Cook over medium-low heat, stirring constantly, until the mixture coats the back of a spoon.

To serve, spoon a thick layer of creme anglaise onto 4 small plates. Place rugala pieces on creme anglaise. Drizzle with raspberry sauce and top with diced walnuts.

Makes 4 servings.
