Ingredients
- 1 large fresh Pom Wonderful pomegranate
- 1 cup very cold heavy cream
- 2 tablespoons confectioners'sugar
- 2 teaspoons vanilla extract

Score pomegranate and place in a bowl of water. Break open the pomegranate underwater to free the arils (seed sacs). The arils will sink to the bottom of the bowl and the membrane will float to the top. Drain the arils in a sieve and place in a separate bowl. Reserve 1/4 cup of the arils and set aside. (Refrigerate or freeze remaining arils for another use, or serve separately.)
In a medium bowl, beat cream with a wire whisk or electric mixer until slightly thickened.
Add confectioners'sugar and vanilla, and whip until the mixture doubles in volume and soft peaks form. Gently fold in 1/4 cup arils.
Serve the cream mixture immediately over your favorite cake or pie.
Makes 4-6 servings.
Variations: Add 1/4 teaspoon ground cinnamon, 1/4 teaspoon ground ginger or 1/4 teaspoon espresso powder along with vanilla.
