Ingredients

  • 2 tbsp canola oil
  • 3 large eggs
  • 1/2 cup White PUree
  • 1 small onion, minced or pureed
  • 1-2 cloves garlic, minced
  • 2 tsp fresh ginger, minced ( or 1/8 tsp ground ginger)
  • 2 cups cooked, cut chicken, ham, pork, beef, or shrimp
  • 4 cups cooked rice, cold (brown rice)
  • 2 tbsp low sodium soy sauce
  • Salt and pepper to taste
  • Optional extra: 1/2 cup peas and/or 2 diced scallions

Preparation

Step 1

Heat 1 tbsp of the oil in a large non stick skillet or wok over medium heat. In a large mixing bowl, whisk eggs with white puree. Add egg mix to the skillet and scramble quickly until almost set, then transfer egg to the bowl.

Increase heat to medium high and heat remaining oil. Add the onion, garlic, and ginger and stir fry for about 2 minutes. Spray the skillet with oil if needed. Ad the cubed meat and stir fry for another 2 minutes. Add the rice and soy sauce and toss until the ingredients are combined well and the rice is heated through. Allow the rice to brown in the skillet. Add eggs, peas and scallion for the last minute of cooking.
