Oven Roasted Sausage and Potatoes

Ingredients

  • 1 pkg sausage, sliced into rounds
  • 1 large onion, peeled and chopped
  • 5 large potatoes, peeled and chopped into 1/2 inch cubes
  • Olive Oil
  • Fine Sea Salt
  • Fresh Ground Black Pepper
  • Sweet Paprika
  • Dried Thyme
  • Handful of strong Cheddar Cheese, grated

Step 1

Preheat oven to 400

Line a large baking tray (sides also) with several sheets of foil and drizzle with a bit of oil. Spread the oil evenly.

Put sausage rounds,, onions and potatoes in a large bowl. Drizzle with some olive oil and season to taste with salt, pepper, paprika and thyme. Pour onto baking try and spread out evenly.

Place in oven for 45 minutes, stirring every 15 minutes until potatoes and brown and tender. Turn off oven, sprinkle with cheese for a few minutes to melt the cheese.
