Ingredients
- 1 cup pomegranate juice
- 1 1/3 cups chicken broth
- 1 cup wild rice (quick cooking)
- salt and pepper to taste
- optional extras: 1/2 cup each dried cherries or cranberries
Preparation
Step 1
In a medium saucepan, bring pomegranate juice and broth to a boil, stir in rice, cover, and reduce to simmer on low. Cook for 35-40 minutes. Remove from heat and drain off any remaining liquid. Stir in optional extras, if using. Add salt and freshly ground pepper to taste.
