  • 1-1/2 lbs chicken breasts, boneless and skinless
  • 2 tbsp lite soy sauce
  • 2 garlic cloves, minced
  • Salt and pepper, to taste*

  • for the peanut sauce:
  • 2 tbsp Smart Balance® Cooking Oil
  • 1/4 cup lite coconut milk
  • 4 tbsp onions, minced
  • 2 tbsp Smart Balance® Rich Roast Creamy Peanut Butter
  • 1-1/2 tbsp minced ginger
  • 2 tsp curry powder
  • 1 tbsp honey
  • 2 tbsp lite soy sauce
  • 1 tbsp fish sauce
  • 3 oz water
  • 1 tsp Sriracha sauce

Step 1

directions:
for the peanut sauce:
Sauté onions and ginger in Smart Balance® Cooking Oil
until slightly golden. Add the curry and sauté for another
minute. Add remaining ingredients and bring to simmer
for 2 minutes. Remove from heat and allow to cool for
20 minutes. Using a blender or a smart stick (emulsion
blender), blend sauce until ingredients are smooth.
Slice each chicken breast in half to create two thinner
cutlets, then cut each cutlet into three long strips. You
should have about 18 to 21 strips of chicken. Combine with
soy sauce, garlic, salt and pepper.
Grill chicken on an indoor or outdoor grill until cooked
through. Thread the chicken onto the skewers. Serve hot
with warm peanut sauce.
