Ingredients
- 1 cup instant brown rice
- 15 oz canned black beans, rinsed and drained
- 1 cup frozen corn kernels, thawed
- 1/4 cup scallions, chopped
- 2 Tbsp cilantro, fresh, chopped
- 2 oz jalapeño peppers, pickled, minced
- 1 Tbsp fresh lime juice
- 1 tsp lime zest, finely grated
- 1/4 tsp table salt, finely grated
- 1/4 tsp black pepper
- 1 medium lime, quartered
Preparation
Step 1
