Pepperoni Salad

Ingredients

  • 1 medium onion- thinly sliced
  • 8 oz. pepperoni- thin sliced
  • 1/4 cup crumbled bleu cheese
  • 2/3 cup salad oil
  • 1/3 cup cider vinegar
  • salt and pepper
  • 10 oz. frozen spinach, thawed, washed, dried, chopped
  • 1/2 head iceberg lettuce, chopped

Preparation

Step 1

The day before serving, separate onion sliced into rings and place in a large bowl; add pepperoni and bleu cheese. Add oil, vinegar, salt and pepper. Toss in the spinach and lettuce. Chill salad overnight in covered bowl.
