Ingredients
- 2 medium onions, cut into 1/2" thick rounds
- 1/4 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
- 2 canned chipotle chilies in adobo, rinsed, seeded, and minced
- 2 teaspoons fresh lime juice
Preparation
Step 1
Try red, yellow, or sweet onions (such as Vidalia) — or a mix of all three — to make these sweet and spicy onion rings. When cooking on an outdoor grill, use a grill topper or a vegetable basket so the onions don’t slip through the grate.
Lightly coat a grill or grill pan with cooking spray and heat to medium-high.
In a medium bowl, toss onions with salt and pepper (rings can separate). Grill onions, turning occasionally, until lightly browned, 10 to 12 minutes. Return onions to bowl, add chilies and lime juice, and toss until the onions are well coated. Serve warm.
