Sweet Potato Casserole

Ingredients

  • 4 Large sweet potatoes, peeled and cut in 1 inch cubes
  • 1/2 Cup brown sugar
  • 1/3 Cup milk
  • 3 Eggs, beaten lightly
  • 1/4 Cup butter
  • 1 tsp vanilla
  • 1/4 tsp salt
  • 1 Cup mini marshmallows

Step 1

Preheat oven to 350 degrees

Boil sweet potatoes on stove until tender and drain.
Transfer to a food processor and process until smooth.
Add brown sugar, eggs, milk, butter and salt.
Process until thoroughly combined.
Transfer to a baking dish. Bake until puffed (approx. 1 hour).
Then position top oven rack 4 inches from top.
Turn on broiler.
Top potatoes with the marshmallows and broil til golden 30-60 seconds.
