Ingredients
- Iron skillet
- 3 T butter
- 1 C brown sugar
- 1 C crushed pineapple
- 3 eggs, separated
- 1 C sugar
- 1 C flour
- 1 t baking powder
- 1 t vanilla

Step 1
Drain crushed pineapple, reserving liquid
Using iron skillet, melt butter; stir in brown sugar & crushed pineapple.
For batter: Mix egg yokes with sugar; fold in dry ingredients.
Beat egg whites & fold into batter along with 2 T pineapple juice & vanilla. Stir just until mixed. (Add more juice if batter seems too dry)
Bake at 350 45min.
