Fresh Corn Salad

Ingredients

  • Fresh white corn
  • English cucumber
  • Ripe avocado
  • French Feta or gorgonzola cheese
  • Chopped tomatoes
  • Balsalmic - thyme vinegarette

Preparation

Step 1

Cut corn of 3-4 ears off of cob
peel and chop into small bites english cucumber
Peel avocado, also chop into bite-sized pieces
Chop tomato into bite sized pieces (a little larger than the corn)
Crumble feta or gorgonzola to taste over vegetables

Toss with balsalmic - thyme vinegarette to taste
