Ingredients

  • 2 cups unbleached all purpose flour
  • 1 T flax meal--golden flax
  • 2 T finely grated espresso
  • 1 T baking powder
  • 1 tsp ground cinnamon
  • 1/8 tsp sea salt
  • 3/4 cup granulated sugar
  • 1 cup vanilla soymilk
  • 1/3 cup canola oil
  • 1 T pure vanilla extract
  • 1/4 cup brewed coffee, cooled
  • 1/2 cup semi sweet chocolate chips

Preparation

Step 1

Preheat oven to 350. Line a 12 cup muffin tray with paper liners.

In a medium bowl, combine the flour, flax meal, espresso, baking powder, cinnamon an salt, mix well.

In a large bowl, whisk together the sugar, soymmilk, oil and vanilla until smooth. Add the flour mixture and brewed coffee, whisking until just mixed. Stir in chocolate chips.

Divide batter evenly among 12 cups filling 3/4 way full. Bake the muffins in a preheated oven for 20-30 minutes.

Let muffins cool 5 minutes in pan.
