Ingredients
- 1 tsp vegetable oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 cloves garlic, minced
- 1/2 tsp each dried thyme and oregano
- 3 cups chicken or vegetable stock
- 1 potato, peeled and chopped
- 2 cups chopped broccoli
- 1 cup frozen peas
- 1 cup milk
- 1/2 tsp salt

Step 1
In large saucepan, heat oil over medium heat; cook onion, carrots, garlic thyme and oregano, stirring occasionally, for 5 minutes or until onion is softened. Add stock, potato and broccoli; bring to boil. Reduce heat, cover and simmer for 15 minutes or until potato is very tender. Add peas; cook for 5 minutes. Pour half into blender, puree until smooth. Return to saucepan. Stir in milk, salt and pepper; heat until steaming.
