Orange-Sesame Pork

Ingredients
- 1 pound lean pork tenderloin, cut crosswise into 8 slices
- 1/4 teaspoon salt
- 1/2 cup orange marmalade
- 2 tablespoons rice wine vinegar
- 1 tablespoon minced garlic
- 2 teaspoons dark sesame oil
- 3/4 teaspoon crushed red pepper flakes
- 1 teaspoon olive oil
- 4 whole green onions, sliced diagonally
- 1 teaspoon toasted sesame seeds
Preparation
Step 1
Place each pork slice between 2 sheets of heavy-duty plastic wrap; using a meat mallet or small, heavy skillet, pound into 1/2-inch thickness; sprinkle evenly with salt; set aside. In a small bowl, whisk together orange marmalade and next 4 ingredients (rice wine vinegar through crushed red pepper flakes) until smooth. Heat the olive oil in a large skillet over medium-high heat; add pork and cook for 1 1/2 minutes per side or until golden brown. Add marmalade mixture and simmer for 6 minutes or until pork is done. Sprinkle pork with green onions and sesame seeds before serving.
SERVING SUGGESTION: Whole wheat couscous and steamed green and yellow (wax) beans.
GLUTEN FREE: Make sure marmalade and vinegar are gluten free.
