Mini Milk Chocolate Sandwich Cookies

Ingredients

  • Cookies:
  • 1/2 cup butter, at room temperature
  • 1/2 cup white sugar
  • 1/4 cup + 1 tbsp. brown sugar, lightly packed
  • 1 large egg, at room temperature
  • 1 tsp. vanilla extract
  • 1 and 1/2 cups all-purpose white flour
  • 1/2 tsp. baking soda
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 cup miniature milk chocolate chips + 1/4 cup to top cookies with.
  • Frosting
  • 1 tub milk chocolate frosting OR make your own

Preparation

Step 1

Cookies
Preheat the oven to 350 degrees F.
In a medium sized bowl, cream the butter, white sugar, and brown sugar for about 2-3 minutes.
Add in the egg and vanilla. Mix together.
In a separate bowl, sift together the flour, baking soda, baking powder, and salt.
Slowly combine the wet and dry ingredients and mix until combined.
Add in the miniature chocolate chips and stir.
Roll out very small balls of dough (refer to picture for size) and place a couple more chocolate chips on top. (This is optional but makes them look better)
Bake for 5-7 minutes or until lightly browned at the edges.
Keep a close eye on the cookies because one second they will be perfect and the next second they are burned!

Frosting
Let the cookies cool completely before frosting.
Either make your own frosting or use frosting from a tub and generously spread the frosting on one cookie. Place another cookie on top in a sandwich fashion.
Store in an airtight container for 4-5 days.
