Jambalaya

Ingredients

  • 1 Tbs. vegetable oil
  • 1 lb. chicken breast cut into 1 inch pieces
  • 12 oz. andouille, cut into coins
  • 1 medium onion, diced
  • 1 green pepper, seeded and diced
  • 1 celery rib, trimmed and diced
  • 1 1/2 tsp. cajun seasoning
  • 1 14oz. can diced tomates with mild green chiles
  • 1 cup long grain white rice
  • 1 15.5 oz can chicken broth

Preparation

Step 1

Cook chicken and sausage in a large lidded skillet until just cooked. Remove Chicken and sausage to a bowl.. Reduce heat and add vegetables to skillet. Cook about 5 mins or until tender. Stir in cajun seasoning, tomatoes and rice. Add broth. Bring to a simmer, cover reduce heat to medium-low and simmer 20 mins or until all the liquid is absorbed. Stir in chicken and sausage. Cook, uncovered 5 minutes until rice is tender.
