- 1 cup quinoa, cooked according to package (Optional: cook in vegetable or chicken-faux stock for more flavor) Cooled to room temperature
- 1/2 bunch fresh cilantro, chopped finely
- 1 TBS Olive Oil (optional)
- Juice of 1 lime
- Salt and freshly ground black pepper to taste
