  • 1 cup quinoa, cooked according to package (Optional: cook in vegetable or chicken-faux stock for more flavor) Cooled to room temperature
  • 1/2 bunch fresh cilantro, chopped finely
  • 1 TBS Olive Oil (optional)
  • Juice of 1 lime
  • Salt and freshly ground black pepper to taste
