Ingredients

  • FILLING:
  • 3 eggs
  • 21 cup sugar
  • 3/4 cup flour
  • 2/3 cup pupkin
  • 1 tsp cinnamon
  • 1 tsp soda
  • 8 oz cream cheese
  • 1 cup powdered sugar
  • 1/2 stick softened margarine
  • 1/2 tsp vanilla

Preparation

Step 1

1. Preheat oven to 375F
2. Grease jelly roll pan. Lay wax or parchment papaer on top and grerase that.
3. Combine eggs, sugar, flour, pupkin, cinnamon and baking powder.
4. Spread in apn. Bounce pan lightly up and downto even out. Bake 9-11 mins. Should bounce back to touch. Cool for 5-10 mins.
5. Lay tea towel over and and flip. Roll lengthwise and refridgerate for 1 hr.
6. Combine filling ingredients.
7.Unroll jelly roll and spread filling over evenly. Roll up again and refrigerate.
