  • 1 CUP BRAD CRUMBS, PREFERABLY HOMEMADE
  • 1/4 TEA. RED PEPPER FLAKES
  • 1 ABOUT 1 LB OF BROCCOLI RABE, TRIMMED & WASHED
  • 1 LB OF SPAGHETTI
  • FRESHLY GROUND BLACK
  • FRESHLY GRATED PARMESAN CHEESE

Step 1

BRING A LARGE POT OF WATER TO BOIL & SALT IT. PUT ¼ CUP OLIVE OIL IN LARGE SKILLET OVER MEDIUM-LOW HEAT. WHEN OIL IS WARM, COOK PARLIC JUST UNTIL FRAGRANT, 1-2 MINUTES. ADD BREAD CRUMBS & RED PEPPER FLAKES & COOK UNTIL BRAD CRUMBS ARE GOLDEN, 5 MINUTES OR SO. REMOVE & SET ASIDE.
COOK BROCCOLI RABE IN BOILING WATER UNTIL IT IS SOFT ABOUT 5 MINUTES, REMOVE DRAIN WELL & CHOP.J COOK PASTA IN SAME POT.

MEANWHILE, ADD REMAINING OIL TO SKILLET OVER MEDIUM-LOW HEAT. ADD BROCCOLI RABE & TOSS WELL. SPRINKLE WITH SALT & PEPPER. WHEN IT IS WARM ADD GARLIC & BREAD CRUMBS AND MIX WELL.
WHEN PASTA IS DONE, DRAIN IT, RESERVING A LITTLE COOKING WATER. TOSS PASTA IN SKILLET WITH BROCCOLI RABE MIXTURE, MOISTENING WITH A LITTLE RESERVED WATER IF NECESSARY. ADJUST SEASONINGS AND SERVE WITH FRESHLY GRATED PARMESAN.
