Ingredients

  • 1 tbsp olive oil
  • 1 lb lean ground beef or turkey
  • 2 cups store bought tomato sauce
  • 3/4 cup White or Orange Puree
  • 1-2 tbsp chili powder
  • 1/4 tsp cumin
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/2 cup Green puree
  • 1 1/2 cups shredded low fat cheddar
  • pepper to taste
  • 6 (8-10inch) flour tortillas, ideally whole wheat
  • Optional Dipping Sauce: salsa and low fat sour cream or plain Greek yogurt

Step 1

Preheat oven to 400 degrees and spray an 11 x 7 glass or ceramic baking dish with oil.

Heat the oil over medium heat in a nonstick skillet. Add the beef (or turkey), stirring to break up, and cook until browned. Meanwhile in a medium mixing bowl, combine the tomato sauce, White/Orange Puree, chili powder, cumin, garlic powder, and onion powder.

Stir the Green puree, 1 cup of the red sauce mix, and 1/2 cup of the cheese into the skillet with meat. Simmer for another 5 min.

Spoon meat mix evenly into tortillas. Coat the bottom of the baking dish with a ladle of sauce mix. Roll up filled tortillas and place seam side down in the prepared baking dish. Pour remaining sauce over the top and sprinkle with remaining cheese.

Cook uncovered for 15-20 min or until cheese is lightly browned and bubbly.

Serve with salsa and plain yogurt or low fat sour cream.
