Baked Salmon in Phyllo

  • 2 large red bell peppers
  • 8 sheets prepared phyllo dough
  • Cooking spray or olive oil
  • Aquafarms fresh salmon fillet, cut in four 6-ounce portions
  • Sea salt
  • Freshly ground black pepper
  • 1 cup crumbled Gorgonzola cheese

Preparation

Step 1

Roast peppers over an open flame until the outer skin is completely black. Immediately drop peppers into a bowl of ice watel Rub off remaining black skin under running water. Cut peppers in half, remove seeds and tops. Puree peppers in a food processor; set aside.

Preheat oven to 375 F.

Lay out 4 sheets of phyllo. Spray with cooking spray or brush with olive oil. Top with remaining phyllo sheets.

Place salmon portions on phyllo. Lightly season salmon with salt and pepper.

Put 2 tablespoons of red pepper puree on top of each fillet. Top with 1/4 cup crumbled Gorgonzola.

Roll up salmon in phyllo, folding under outer edges.

Coat a baking sheet with cooking spray. Place salmon packets on the baking sheet and spray with cooking spray.

Bake for about 25 minutes, or until internal temperature is 160 F.
