Wisconsin Potato Cheddar Soup

Ingredients

  • 2 TBS butter
  • 1/3 cup chopped celery
  • 1/3 cup chopped onion
  • 4 cups diced and peeled potatoes
  • 3 cups broth
  • 2 cups milk
  • 1-1/2 tsp salt
  • 1/4 tsp pepper
  • 8 oz cheddar cheese

Preparation

Step 1

1) In large saucepan, melt butter and saute celery and onion till tender
2) Add potatoes and broth and cover and simmer till potatoes are tender (approx 15 min)
3) Mash potatoes in the pan
4) Stir in milk and seasonings
5) Add cheese and heat till cheese is melted
6) Let cook longer if needs to thicken
