Double Orange Chicken

Ingredients

  • Nonstick cooking spray
  • 4 Kirkland Signature/Tyson* Individually Frozen Boneless,
  • Skinless Chicken Breasts, thawed
  • 1/4 cup fresh orange juice
  • 2 tablespoons orange marmalade
  • 1/2 teaspoon grated fresh ginger
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground pepper
  • 2 navel oranges, peeled and sectioned

Preparation

Step 1

Preheat oven to 425'F

Spray a 13-by-9-inch baking pan with cooking spray. Wash hands. Arrange chicken in the pan. Wash hands.

In a small bowl, combine orange juice, marmalade, ginger, salt and pepper, pour over the chicken. Cover the pan tightly with foil; bake for 40 minutes.

Baste the chicken with sauce. Bake uncovered for 10 minutes more, or until done (internal temperature 170 F.

With a slotted spoon,transfer chicken to a platter. Stir orange sections into the sauce; pour over the chicken.

Makes 4 servings.

Serving 5uggestion: Serve with steamed sugar snap peas and fried rice. Refrigerate leftovers.

Tip: To use frozen breasts, increase cooking time by about one-third.
