Ingredients
- 1 (10 inch) flour tortilla
- Rotisserie chicken, cut in bite size pcs -- about 3 cups
- 1/2 cup chopped cilantro
- 1/2 cup chopped onion
- 1/3 cup drained jarred pickled jalapenos, chopped
- 2 cups shredded cheddar
- salt & pepper
- 2 eggs
- 1 cup milk
- 1 cup all-purpose flour
- 1 tsp. baking powder

Step 1
Preheat oven to 450. Grease 9 inch pie plate. Press tortilla into prepared pie plate coming up sides slightly and spray lightly with Pam. Toss chicken, cilantro, jalapenos, onion, 1 cup cheese, 1/2 tsp. salt and 1/2 tsp. pepper in bowl until combined. Spread filling over tortilla.
Whisk eggs, milk, flour and baking powder in bowl until smooth. Slowly pour over filling, then sprinkle with remaining cheese. Bake until golden brown, about 20 min. Let cool 5 min. Cut into wedges.
