  • 2 cups frozen shredded hash browns, thawed and drained
  • 1/2 cup White bean puree
  • 1/4 cup whole wheat flour
  • 4 hot dogs, turkey, beef, or soy (no nitrates), cut into 1/2 inch pieces

Step 1

Preheat oven to 425 degrees. Linea baking sheet with parchment paper, or spray with oil.

In a medium size bowl, mix together the hash browns, White bean puree and flour. Pinch off about one tbsp of potato dough mixture and, using hands, press dough to fully wrap around each piece of hot dog. Form into log or ball shapes. Spray all sides of the wrapped hot dog with oil and bake for 10 minutes. Remove the pan from the oven, flip the pups, spray the other side with oil, and bake for another 10 minutes. Serve as a hot dish or let cool and store in a plastic bag in the freezer for use within 3 months.
