Ingredients

  • 4 medium carrots, shredded
  • 1 cup flour
  • 1 cup water
  • vegan egg replacer for 1 egg
  • garlic salt (I use about a teaspoon, but that's 'cause I love garlic!)
  • 1/2 teaspoon Paprika
  • yeast, just a pinch
  • pepper to taste
  • frying oil

These don't taste like the real thing, but are just delicious!

Mix all the ingredients, except the carrots and oil, until you get a thick sauce with no lumps. While you do this, heat the oil in a frying pan. Add the carrots to the mixture and coat evenly. Take a spoonful of the mixture and put it in the hot oil, you can use the spoon to shape the mixture kind of like a shrimp . Make sure the "shrimps" are crispy, carrots have a lot of humidity and this may make them a bit chewy. If you serve them immediately over a bed of lettuce, you'll get a great meal. You can make a dip with vegan mayo and chopped cucumber and onion, yummy!
