Portable Pizza Muffins

Ingredients

  • 1 cup flour blend
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp dried oregano and/or basil
  • 2 large eggs
  • 2 Tbsp brown sugar, packed
  • 3 tbsp canola or vegetable oil
  • 1/4 cup tomato paste plus 3 Tbsp tomato paste for tops
  • 1/2 cup orange puree
  • 1 cup grated parmesean

Preparation

Step 1

Preheat oven to 350 and grease 8 cups in a muffin pan or line 8 cups with paper muffin cups.

In a large bowl, whisk together the flour blend, baking powder, baking soda, salt, and oregano and/or basil. In another large bowl, whisk together the eggs, brown sugar, canola oil, 1/4 cup tomato paste, orange puree, and 1/2 cup parmesean cheese. Fold the wet ingredients into the dry and mix until the flour is just moistened. Stir in optional extras. Dont over mix.

Divide batter evenly among the 8 muffin cups. Top each muffin with a dollop of tomato paste and about 1 tbsp parmesean.

Bake 25-30 min until a toothpick comes out clean. Turn out muffins to cool, or serve warm.
