Ingredients

  • Cookies
  • 2 cups Sugar
  • 2 sticks unsalted butter – softened
  • 1 15 oz container of Ricotta
  • 2 tsp vanilla
  • 2 eggs
  • 4 cups flour
  • 2 tbs baking powder
  • 1 tsp salt
  • Icing
  • 2 cups confectioners’ sugar
  • 4 1/4 tbs milk
  • Red and green sprinkles

Preparation

Step 1

Preheat oven to 350.
Mix on low speed sugar and butter until blended
Increase spead and mix until light and fluffy
Beat in ricotta, vanilla and egs until well combined
Reduce speed and add flour, baking powder and salt until dough forms
Drop dough onto cookie sheet and bake until lightly browned, about 11 min.
Lay cookies on wax paper until completely cooled (overnight is best)
Make icing and dip cookies in icing and add sprinkles
