Honey Battered Popcorn Shrimp

Ingredients

  • Dipping sauce:
  • 1/4 cup whole grain flour
  • 2 egg whites
  • 2 tbsp honey
  • 1/2 cup oat bran
  • 1/2 cup cornmeal
  • 1 tbsp sugar
  • 1/4 tsp salt
  • 1 lb cleaned, raw rock shrimp, or small shrim shelled and deveined
  • 2 lemons, cut into wedges
  • 1 tbsp honey mustard
  • 1 tbsp strawberry or apricot jam
  • 2 tbsp orange puree

Preparation

Step 1

Preheat oven to 425 and spray baking sheet with oil.

Pour flour into a large plastic bag or onto a plate. Beat egg whites with honey in a shallow bowl and place next to the flour. Combine the oat bran, cornmeal, sugar, and salt in another large plastic bag or shallow bowl. Mix well.

First dredge (or shake in bag) a small batch of shrimp in the flour and shake of excess, then dip in the egg mixture, and then dredge or shake in the bag) in the oat bran mix.

Place breaded shrimp on the prepared baking sheet. Spray the top side of the shrimp generously with oil and bake for about 6 minutes. With a spatula, turn shrimp over once, spray with oil and return to oven another 6 minutes.

Serve with lemon wedgesand dipping sauce.

For dipping sauce:

In a small bowl whisk together all the ingredients. Use immediately or cover and store in fridge up to 3 days.
