Lunchbox Mexican Muffins

Ingredients

  • 12 (6in) round whole wheat flour tortillas
  • 8 egg whites
  • 4 large eggs
  • 1 cup salsa
  • 1 cup orange or white puree
  • 2 cups shredded low fat cheese (jack or cheddar)
  • Salt and pepper to taste
  • Optional: 1/2 cup chopped sweet pepper and/or onions

Preparation

Step 1

Preheat oven to 350. Spray both sides of each tortilla lightly with oil, then gently press one tortilla into each muffin tin, making bowl shapes.

In a mixing bowl, whisk the egg whites, eggs, salsa, orange or white puree, and 1 cup of the cheese. Divide the mixture evenly among the 8 tortilla cups. Top each evenly with the remaining cheese and bake for 20 min until cheese is lightly browned and bubbly.
