Sweet Potato Biscuits

Ingredients

  • 2 1/2 c. all-purpose flour
  • 2 TBSP. baking powder
  • 1/8 tsp. allspice
  • 1/8 tsp. gr. cloves
  • 1/2 tsp. salt
  • 1/4 c. packed brown sugar
  • 1/4 c. unsalted butter, chilled
  • 1 1/2 c. sweet potatoes, mashed
  • 2 TBSP. milk

Preparation

Step 1

Heat oven to 425. Sift flour, baking powder, allspice, cloves and salt in lrg. bowl.
Blend in the brown sugar with fingertips.
Cut in chilled butter with pastry blender until crumbly.
Stir in mashed sweet potatoes and knead until dough just holds together.
Turn dough onto lightly floured surface.
Knead gently for 1 minute, adding a little flour to incorporate all.
Pat dough in a 1/2 inch thick circle.
Cover with a clean towel 10 - 15 mins. Cut out with biscuit cutter.
Arrange about 3/4 inch apart on ungreased baking sheet.
Bake 10 - 12 mins.
