Ingredients

    cups flour blend

  • 1/2

    cup old fashioned rolled oats

  • 1/2

    tsp salt

  • 1/2

    tsp baking soda

  • 2

    tsp baking powder

  • 5

    tbsp cold unsalted butter, cut into bits

  • 1/4

    cup white bean puree

  • powedered sugar for dusting

  • 1/4

    cup low fat ricotta cheese

  • 1/4

    cup low fat buttermilk

  • 1

    large egg plus 1 egg for egg wash

  • 2

    tsp pure vanilla extract

  • 1/4

    cup sugar

  • 1

    cup dried cherries or blueberries

  • 1/2

    cup semi sweet chocolate chips

Directions

Preheat oven to 400. Grease the center of a baking sheet. In a large bowl whisk together the flour blend, oats, salt, baking soda, and baking powder. Using your finger tips, work the butter into the dry mix evenly, forming little pea size clumps. In another bowl whisk togeter the white bean puree, ricotta, buttermilk, 1 egg, vanilla, and sugar. Add the dry ingredients to the wet and mix just enough to moisten. STir in cherries or berries, and chocolate chips. Place dough on prepared baking sheet and form a large circle. Cut into 8 wedges. In a small bowl, beat the remaining egg with a tsp of water. Brush the tops of each wedge with egg wash and dust with sugar. Bake for 14-16 minutes or until edges are lightly browned and a toothbpick inserted in the center comes out clean.
