Chicken Tacos

Ingredients

  • 1 egg
  • 3 tbsp lemon juice , divided
  • 1/4 c flour
  • 1 1/2 lbs boneless skinless chicken breast halves
  • 1/4 cup butter
  • 1/2 cup chicken broth
  • 1/4 tsp – 1 tsp hot pepper flakes
  • citrus salsa

Preparation

Step 1


In a bowl, beat egg with 1 tbsp lemon juice

Place flour in shallow dish

coat chicken breast halves in egg mix, then dredge in flour.

In a large skillet melt butter over medium heat. Add chicken and brown on both sides, about 6 minutes per side.

Add chicken broth, hot pepper flakes and the remaining 2 tbsp of lemon juice. Reduce heat to low and cover.

Simmer until chicken is no longer pink inside, about 15 – 20 minutes. Cut into slices.

Divind chicken equally amount 8 – 6” tortillas warmed.

Top with 2 cups salad mix & citrus salsa.
