S'more Brownies

Ingredients

  • Crust:
  • 8 tbsp unsalted butter, melted
  • 1 1/2 cups crushed graham cracker crumbs
  • 2 tbsp sugar
  • Pinch fine salt
  • Brownie:
  • 8 tbsp unsalted butter
  • 4 ounces unsweetened chocolate, chopped
  • 1 cup packed light brown sugar
  • 3/4 cup white sugar
  • 1 1/2 tsp pure vanilla extract
  • 1/2 tsp fine salt
  • 4 large eggs
  • 1 cup all-purpose flour
  • Topping:
  • 4 cups large marshmallows

Preparation

Step 1

Preheat oven to 325 degrees F and foil 8-by-8 pan

Crust:
lightly butter foil
Stir in butter, crumbs, sugar, salt in a bowl
Press crumb mixture over the bottom of pan
Bake 20 minutes

Brownies:
Place butter and chocolate in microwave for 2 minutes
Stir and keep microwaving until melted
Put butter/chocolate in a heatproof bowl
Bring a saucepan filled with 1 inch of water to a simmer
Set the bowl of butter/chocolate on the pan
When melted, stir in brown and white sugar, vanilla, salt
Add eggs and beat vigorously until thick
Add flour and stir
Pour batter into prepared pan and bake for 40-45 minutes
Remove from oven and position a rack 6-in from the broiler and preheat on low
Layer marshmallows across the top and toast until golden
