Ingredients

  • Cake:
  • 2 cups grated carrots
  • 2 cups sugar
  • 4 eggs
  • 1 1/2 cup Wesson Oil
  • 2 cups self-rising flour
  • 1 tsp. cinn.
  • 1 tsp. vanilla
  • Pince salt
  • Icing:
  • 1 stick butter, softened
  • 1 8 oz. cream cheese, softened
  • 1 cup chopped nuts
  • 1 box confectioners' sugar (3 3/4 cups)
  • 1 tsp. vanilla
  • milk to spreading consistency

Preparation

Step 1

Cake:
Mix sugar, eggs and oil. Add flour salt & cinn. Add to egg and sugar mixture and beat well. Stir in carrots and vanilla.
Bake in 3 9 inch greased and floured pan 1 hr. 15 minutes at 325 degrees

Icing:
Mix all ingredients, milk to spreading consistency. Frost side and top of cake.

Refrigerate
