Ingredients

  • 1 1/2 C oil
  • 2 Cups Sugar
  • 4 Eggs
  • 1 tsp vanilla
  • 2 Cups Flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 2 tsp baking soda
  • 1 T cinnamon
  • 1 tsp nutmeg
  • 3 Cups carrots - peeled and grated
  • 1 C walnuts
  • 1 Cup raisins
  • Icing
  • 1/2 Cup Butter
  • 6 oz cream cheese
  • 2 tsp vanilla extract
  • 1 Box powdered sugar

Preparation

Step 1

Set oven to 350 degrees
Combine oil and sugar. Beat in eggs, one at a time, then add vanilla.
Sift dry ingredients together and add to egg mixture.
Add grated carrots and nuts and raisins.
Mix well.

Pour into two greased 9 inch cake pans
