Lamb Chops with Smoky Red Pepper Sauce

Ingredients

  • 7 oz jar of roasted red bell peppers
  • 1 tbsp red wine vinegar
  • 1 tbsp extra virgin olive oil
  • 1 clove chopped garlic
  • 1/4 tsp smoked paprika
  • grilled baby lamb rib chops
  • cooked green beans

Preparation

Step 1

1. Rinse and drain a 7 oz jar of roasted red bell peppers.
2. Add to blender with 1 Tbsp red wine vinegar, 1 Tbsp extra virgin olive oil, 1 clove chopped garlic, and 1/4 tsp smoked paprika. Puree until smooth.
3. Transfer to small saucepan and simmer until heated through.
4. Serve sauce with grilled baby lamb rib chops and cooked green beans.
