  • 4 tablespoons (1/2 cup) unsalted butter
  • 1 1/2 cups fine fresh bread crumbs
  • 1 tablespoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 pound Maine crabmeat
  • 1/4 cup freshly squeezed lemon juice
  • 3/4 cup sour cream
  • 1/2 About 1/2 cup all-purpose flour, plus additional for coating
  • 3 tablespoons vegetable oil

Step 1

Melt butter in large skillet over moderate heat. Add breadcrumbs, salt & pepper & let cool. Place crabmeat in large bowl & remove any bits of shell. Add lemon juice. Toss. Mix in sour cream, ½ cup flour & bread crumbs. Form mixture into 12 equal-sized patties. If mixture is too wet, add a little more flour. Coat each crab cake with flour. Heat vegetable oil in large skillet over moderately high heat until hot, add crab cakes & cook until nicely brown about 2 minutes on each side.
