Ingredients
- What you'll need
- 1 chicken breast (fresh or frozen)
- 1 red bell pepper, seeded and diced
- 1 yellow onion, thinly sliced into half moons
- 1 carrot, shredded
- 1 cup frozen peas
- 4 cups chicken broth (add more as needed to get final result the consistency you want)
- 1 (13.5 oz) can coconut milk
- 2 Tablespoons Thai red curry paste
- 2 Tablespoons fish sauce
- 2 Tablespoons creamy peanut butter
- 1 Tablespoon brown sugar
- 1 Tablespoon grated fresh ginger
- 1/2 cup uncooked rice (white or brown)
- 1 Tablespoon lime juice
Preparation
Step 1
Put all ingredients except lime juice and cilantro in the slow cooker. Cook on low for 7-8 hours. Shred the chicken with two forks and stir in lime juice. Top with chopped cilantro, if desired.
