Ingredients
- 3 ripe peaches, quartered and pitted
- 12 slices pancetta
- 1 tsp slat
- 1/4 tsp pepper
- 3 loosely pack cups of greens
- 2 tsp olive oil
- 1 1/2 tsp balsamic vinegar
Preparation
Step 1
Wrap the peaches with the pancetta slices. Sprinkle all over with 3/4 tsp salt and 1/8 tsp pepper. Grill over medium heat, turning once, until pancetta is rendered and the peaches are soft, 3-4 minutes total. Set aside in a warm place.
Put the greens in a bowl. drizzle with a few drops of the oil, and sprinkle the remaining 1/4 tsp salt and 1/8 tsp pepper. Toss well.
to serve,make a bed of greens in the center of six plates. Top each with two peach quarters and drizzle with remaining oil. Drizzle with the balsamic vinegar and serve while the peaches are still warm.
