Mom's Italian Biscotti

Ingredients

  • 5-1/2 c. all-purpose flour
  • 1 T. plus 2 t. baking powder
  • 3/4 c. butter, softened
  • 1-1/2 c. sugar
  • 6 eggs
  • zest and juice of 2 lemons
  • 3-1/2 c. powdered sugar

Preparation

Step 1

Mix together flour, baking powder, butter and sugar; form a well in the center. Add eggs and zest; knead until dough is smooth. Shape dough into 2-inch balls on a floured surface; roll each into a 7-inch rope. Twist into knots; place on lightly greased baking sheets. Bake at 350 degrees for 15 to 18 minutes. Cool on a wire rack. Combine lemon juice and powdered sugar; drizzle over cookies.

Makes 3 dozen.
