Ingredients
- 2 small tomatoes
- 1 small onion
- 1 jalapeno pepper
- 2 garlic cloves
- 1/2 tsp hot sauce
- 1 tsp ground cumin
- Kosher salt & freshly ground black pepper
- 2 tbsp and 2 tsp extra-virgin olive oil
- 1 can black beans, drained and rinsed
- 4 large eggs
- 4 (6-in) corn tortillas, warmed
- 1/2 cup crumbled feta cheese
- 1/4 fresh cilantro
Preparation
Step 1
Salsa:
Grate tomatoes and onions into large bowl
Add jalapeno, garlic, hot sauce, cumin, salt, pepper
Heat skillet add 2 tsp olive oil
Fry salsa in oil until thickens, 3 minutes
Remove to a bowl and set aside
Add beans, garlic, 1/2 cup warm water, salt to the same pan, smash slightly with fork
Heat remaining 2 tbsp oil in another skillet
Fry eggs sunny-side up, season with pepper
Place 1 warm tortilla on each plate, divide beans among them, top with a fried egg, salsa, and cheese
Sprinkle with cilantro
