Cinnamon Raisin Breakfast Cookies

Ingredients

  • 1 1/2 cups flour blend
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 3 cups old fashioned rolled oats
  • 2 large eggs
  • 1 cup white bean puree
  • 1/2 cup packed brown sugar
  • 4 tbsp butter, melted
  • 1 cup raisens

Preparation

Step 1

Preheat oven to 350. Line a baking sheet with parchment paper.

In a large bowl, whisk together flour blend, baking soda, salt, cinnamon, and oats. Set aside.

In another large bowl, whisk together eggs, white bean puree, sugar, and melted butter.

Stir the dry ingredients into the wet ingredients until the dry ingredients are just moistened. Stir in raisens, then drop singe tbsp fuls onto the baking sheet, leaving about an inch between cookies.

Bake 20-25 min or until golden brown.

Let cool on metal rack.

Serve with a glass of colde milk. :)

Store in airtight container for 3 days. Or in freezer for 3 months.
