Coconut Cake

This is one of the best desserts! My mom often makes it for Easter. We also make it into cupcakes instead of the cake.

Ingredients

  • 1 pkg yellow cake mix
  • 1 pkg vanilla flavor instant pudding
  • 1 /13 c water
  • 4 eggs
  • ¼ c oil
  • 2 c coconut
  • 3 layer pans – bake at 350 degrees for 35 mins.

Preparation

Step 1

Coconut Cream Cheese frosting:
4 T butter
8 oz cream cheese
2 c coconut
3 ½ c powdered sugar
½ tsp vanilla
Melt 2T butter in skillet. Add coconut – stir until golden. Spread Coconut on paper to cool. Cream remaining ingredients plus 1 ¾ c coconut. Sprinkle remaining on top.
