Ingredients

  • 2 tbsp Butter
  • 1 cup Onion, chopped
  • 3 cup Butternut squash, peeled and cubed
  • 2 cup Apple, peeled and diced
  • 4 cup Chicken broth canned
  • 1 cup Apple juice
  • 3/4 tsp Salt
  • 1/2 tsp Ground corriander
  • 1/2 tsp Ground ginger
  • 1/2 tsp Nutmeg
  • 1/2 tsp Ground pepper
  • 1/2 tsp Parsley, chopped
  • 1/2 tsp Paprika

Preparation

Step 1

-saute onion in butter until soft, add squash and apple, stir in chicken broth, apple juice, salt, corriander, ginger, nutmeg and pepper and bring to boil.
-Reduce heat and let simmer uncovered, stirring occasionally until squash and apple are tender 25-30 mins.
Puree soup in batches in a blender, serve sprinkled with parsley or paprika.
