Ingredients
- 2 tbsp Butter
- 1 cup Onion, chopped
- 3 cup Butternut squash, peeled and cubed
- 2 cup Apple, peeled and diced
- 4 cup Chicken broth canned
- 1 cup Apple juice
- 3/4 tsp Salt
- 1/2 tsp Ground corriander
- 1/2 tsp Ground ginger
- 1/2 tsp Nutmeg
- 1/2 tsp Ground pepper
- 1/2 tsp Parsley, chopped
- 1/2 tsp Paprika

Preparation
Step 1
-saute onion in butter until soft, add squash and apple, stir in chicken broth, apple juice, salt, corriander, ginger, nutmeg and pepper and bring to boil.
-Reduce heat and let simmer uncovered, stirring occasionally until squash and apple are tender 25-30 mins.
Puree soup in batches in a blender, serve sprinkled with parsley or paprika.
