Pumpkin and Chocolate Chip Cookies

Ingredients

  • 2 cups (1 can) pumpkin
  • 2 cups sugar
  • 1 cup oil
  • 2 eggs
  • 4 cups flour
  • 4 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 2 teaspoons baking soda dissolved in 2 tsp. milk
  • 2 teaspoons vanilla extract
  • 2 cups (1 large pkg) chocolate chips
  • 1/2 teaspoon salt

Preparation

Step 1

Mix and drop on cookie sheet. Bake at 375 degrees for 10-12 minutes.
They are moist and freeze well. They puff up, but do not spread out when they bake.
