Ingredients

  • 1 . 1/2 # Shrimp (frozen, cooked) thawed, tails removed
  • 2 . 1/4 medium onion, finely chopped
  • 3 . 3 cloves garlic, finely chopped
  • 4 . 1 green bell pepper, cut into strips
  • 5 . 1 16 oz can fire roasted tomatoes with chipolte
  • peppers
  • 6 . 2 bay leaves
  • 7 . 1 tsp dried Mexican oregano
  • 8 . 1 2.25oz can black olives, sliced
  • 9 . Salt and pepper to taste
  • 10 2 tbs capers (optional)
  • 11 . 1+ EVOO

Preparation

Step 1

1. Heat oil in large skillet.
2. Add onions, garlic saute for 3-4 ".
3. Add tomatoes, bring to boil add bell peppers stir
4. Add salt & pepper, oregano, bay leaves, olives,
5. Cover, reduce to low heat until bell peppers soften
6. Add shrimp, cover heat until shrimps are cooked.
